Fried Sweet Plantain Recipe – Maduros, Amarillos, Fried Ripe Plantains
Maduros, Amarillos, Fried Ripe Plantain, or Fried Sweet Plantain are all the same just different names. Ripe plantains are sweet and delicious. Perfect side dish for meat, chicken, rice bowls, you name it. Plus, this recipe really can’t get any easier.

Ingredients
2 Ripe plantains (yellow with some black spots)
Oil for frying
Instructions
Peel and cut the ripe plantains into about ¼“ – ½“ angled sections. Try to not cut them too thin because they will be too mushy. You will get about 16 pieces per plantain depending on the size.
Heat the oil to about 350°F. You can pan fry this so you don’t need a lot of oil, about half the height of the plantain.
Place plantain pieces in the oil and fry until golden. About 2-3 min per side.
Once golden, transfer to a plate lined with paper towel so it absorbs some of the oil. Serve warm.
How to store them?
These are so good that I don’t think you will have any leftovers. They are best when fresh and I personally don’t like reheating them. Our supermarket sells frozen Maduros, so technically you can freeze them if you have extra.
