Ham and Chorizo Croquettes / Croquetas de Jamón y Chorizo
Living in Miami, there are countless options to find croquets and at a good price, but not many options with the exquisite taste of Spanish chorizo. Maybe you live in another state where croquets are hard to come by, this recipe is for you. They are so easy to make and freeze for a quick snack, appetizer, or meal.
Ingredients
4 tbsp Butter (Love love love with Irish Butter)
1 tbsp Fresh Italian Parsley
3 cloves garlic
¼ cup Yellow Onion
1 cup Whole Milk
¾ cup All-Purpose Flour
1 tsp oregano
½ tsp paprika (smoked spanish paprika)
½ tsp salt
1 cup ham (Jamón serrano, Canadian Bacon, or Smoked Ham)
2 links Spanish Chorizo
1 cup shredded Parmesan Cheese (you can also use swiss or manchego)
2 Eggs
Bread crumbs (I like Italian flavor)
Directions
Chop the parsely, garlic, and onion to create the sofrito.
Over medium heat, melt the butter and add in the sofrito.
Stir for about 2 min.
Add in the milk and stir until simmering.
In a seperate bowl mix the flour, oregano, paprika, and salt.
Once the liquid mixture is simmering, turn off the heat and add in the dry ingredients.
Mix Mix Mix. Try to mix in any flour pockets.
Remove the skin of the chorizo and any hard outer layer of the ham if any.
IMPORTANT: Use a blender or food processor to chop the ham and chorizo into very small pieces. If the pieces are too large, the croquette will fall apart while frying.
Once blended, add it into your dough and add in the cheese.
Mix until everything is blended in nicely.
Cover and chill for at least 1 hour in the fridge.
Now to coat with breadcrumbs.
Whisk the eggs in a seperate bowl. Pour bread crumbs in another bowl.
Use your hands or a spoon to make the croquette shape. Dip each croquette in the egg wash and then coat with the breadcrumbs.
You can store in freezer bags or fry right away
To Fry
Heat oil to 350°F
Place the croquettes in the oil and fry until golden.
Let cool and enjoy!
